01 - Line a baking sheet with parchment paper and set aside.
02 - In a medium bowl, combine Greek yogurt, protein powder, honey or maple syrup if using, vanilla extract, and salt. Whisk until smooth and completely blended.
03 - Gently fold the diced strawberries into the yogurt mixture until evenly distributed.
04 - Using a small cookie scoop or tablespoon, drop 1-tablespoon mounds onto the prepared baking sheet, spacing them slightly apart.
05 - Place the baking sheet in the freezer for at least 2 hours, or until the bites are completely firm to the touch.
06 - Melt chocolate chips in a microwave-safe bowl in 20-second intervals, stirring between each heating until smooth. Dip each frozen bite into chocolate or drizzle over the top. Return to the freezer for 10 minutes to set the coating.
07 - Transfer the bites to an airtight container and keep frozen. Allow to sit at room temperature for 2-3 minutes before eating for optimal texture.
