01 - Wash cucumbers thoroughly. Trim ends and slice lengthwise.
02 - Position cucumbers cut side down on cutting board. Press gently with the flat side of a chef's knife or a rolling pin to split and crack. Chop into bite-sized pieces.
03 - Scatter kosher salt over cucumbers and let drain in a colander for 10 minutes to remove excess moisture. Pat dry using paper towels.
04 - In a mixing bowl, combine rice vinegar, soy sauce or tamari, sesame oil, sugar, and minced garlic. Whisk until well blended.
05 - Add dried cucumber pieces and thinly sliced scallions to the bowl. Toss to coat with dressing.
06 - Allow to marinate for 5 to 10 minutes to develop flavors.
07 - Transfer salad to a serving dish. Top with toasted sesame seeds, chopped cilantro, and red pepper flakes if desired. Serve immediately.
