02 - Add rolled oats to the processor and pulse 3-4 times until just combined and mixture begins to hold together. Avoid over-processing to maintain some texture.
03 - Transfer mixture to a mixing bowl. Gently fold in blueberries using a spatula, taking care not to crush them.
04 - Refrigerate the mixture for 10 minutes to firm slightly, making it easier to roll into balls.
05 - With lightly damp hands, roll mixture into 16 equal balls, approximately 1 tablespoon each.
06 - If desired, roll each ball in shredded coconut until evenly coated on all sides.
07 - Place in an airtight container and refrigerate up to 4 days or freeze up to 1 month.
