04 - Drain, rinse, and pat potatoes completely dry with clean kitchen towels.
05 - Toss dried potatoes in a bowl with olive oil, sea salt, black pepper, and optional seasonings until evenly coated.
06 - Spread fries in a single layer on prepared sheets, leaving space between each piece.
07 - Bake for 20 minutes, flip fries and rotate trays, then bake an additional 12 to 15 minutes until golden and crisp.
08 - Remove from oven, season with extra salt if desired, and serve immediately.
